Letizia and Raniero. Both in the kitchen. Raniero is also in the dining room, and in the cellar. Not a division of roles — but a shared vision that flows through everything.
Letizia cooks to convey emotions; she knows it is the only way to justify the toll of an ancient craft. Raniero selects the ingredients, manages the suppliers, chooses the wines, and then returns to the kitchen. “Quality is hard to hide” — in the dish as in the glass.
When you manage everything personally, there are no filters between the idea and the result. And it shows.
The table is about emotion and conviviality.
Take your time — because the emotions of a fine food and wine pairing leave a pleasant memory only if you are not in a rush. At the table, haste is a poor companion, and it ill-suits a concrete cuisine like ours.
